Confessions of A Self-Admitted Foodie

Alright, first a disclaimer:

This is not a food blog, but I am a self-admitted foodie. The kind that takes pictures of their food at restaurants before they eat it. The kind that scours pinterest for new recipes. The kind that has more than one cook book on their kindle. The kind that makes food-related posts on non-food blogs. That’s me.

I am also living truly on my own now for practically the first time in my 24 years. On top of that… I work a high-stress yet low-paying job (Chasing dreams out here ya’ll). Cooking is not only cost-saving, satisfying and satiating for me… it’s relieving. I relish a delicious, well-prepared meal. And no, I am surprisingly *not morbidly obese. Although, I would say I have a healthy obsession with good food. (I’m clearly still in the “denial” phase of dealing with an addiction).

So, with that said, I holding my head high, puffing out my chest, and providing all of our beloved thREADERS with my first, self-made recipe. Yes, I came up with this all by myself. I have no idea what to call it, but rest assured… it is highly delectable.

Easy Chickeney, Noodley, Spinachey, Saucey Goodness

This is an easy, quick meal that tastes great. No idea if it’s healthy, but you can whip it up in no time! Here’s what you need:

  • Fresh, baby spinach leaves
  • Boneless, skinless chicken breast
  • Noodles (flat noodles, udon noodles, angel hair… whatever you like!)
  • KC Masterpiece honey teriyaki marinade
  • Pineapple juice

That’s right… just FIVE ingredients! The best part is, you get to throw most of them in a crock pot and then forget about them until your belly begins to rumble! For those of you unfamiliar with the marinade, you can find it at any grocery store on the condiment isle near the bbq sauce. Here’s what it looks like:

Now you may have noticed that I didn’t tell you how much of each thing you need on the recipe list. Well, I’m just not a measurement kind of girl. If you like lots of spinach, throw lots of it in there! If you like plenty of noodles, use a bunch! If you want it to taste more sweet and tangy, put more pineapple juice! You get the idea. Do whatever your own little taste buds lead you to do! Now for some directions:

  • Throw the chicken breasts, pineapple juice, and teriyaki marinade in the slow cooker. Cook on low for 4-5 hours, or on high for 2-3 hours. I put just enough of the wet ingredients in there so that all of the chicken is submerged.
  • Kick back and relax (or in my case… go to work), and let the slow cooker do the REAL work!
  • When you’re about ready to eat, boil your water for the noodles and throw them on the stove.
  • Take the chicken out of the slow cooker, and shred with a fork.
  • Put olive oil and the baby spinach leaves in a medium-sized frying pan and saute it over medium heat.
  • Throw the cooked noodles and shredded chicken in the same frying pan, and add some of the marinade. Use more if you like your noodles more saucy, use less if you want them more sticky. I used about two cap fulls.
  • Stir fry all of your ingredients over high heat for about five minutes until you hear the noodles start crackling and popping. Taste them to decide when they’re ready to eat! Then, put it all in a bowl and enjoy! Bon Appetit! 

Once the chicken is done, this takes about 10 minutes to make.

PS: For those of you who happen to be wine-o’s like me… (I know what you’re thinking. A foodie and a wine-o. Dangerous combination.) This dish goes great with a California white. I suggest Ménage à Trois. According to their website, “Three different grapes add up beautifully in our Ménage à Trois White. The Chardonnay is rich and firm. The Muscat is wild and exotic. The Chenin is soft and supportive. Together they make the perfect threesome.” Did I mention that it’s cheap? About 10-11 dollars depending on where you go. You can find it at almost any liquor store, or even HEB! Here’s what the bottle looks like:

This is literally the easiest and most delicious thing I’ve ever come up with in the kitchen! I hope you try it, and I hope you like it even more. Remember, you heard it here first!

The Tale of Five Lawyers

It’s been another week full of news surrounding the Trayvon Martin case. Of course, George Zimmerman was charged with second degree murder yesterday. That’s not what I want to focus on, though. Let me preface all of this by saying that I am not an attorney. I don’t have a law background aside from the Sports Law classes I took in undergrad and grad school. I want to focus on the parade of lawyers that I’ve seen this week. First, there were Zimmerman’s first two lawyers, Hal Uhrig (1) and Craig Sonner (2). I saw these two on a late-night political show, and they quickly pissed me off. I was amazed by how abrasive and unprofessional they came off. I was honestly sickened by the whole interview. So when Uhrig and Sonner withdrew as Zimmerman’s counsel on Tuesday, I was thrilled and concerned at the same time. If they had stayed on the case, I think it would have been an easier case for the prosecution. Prosecution. Enter Angela Corey (3). I watched her press conference last night, and she impressed me. She was very sharp and astute, and for the first time, I felt like this case was in very good hands. She took control of the presser and I think she has some damning evidence that has yet to be presented to the public. Just a hunch. Like I said, I’m not a lawyer. You know who is a lawyer, though? Benjamin Crump (4). *sigh*

Really???

Now, I’ve gotten some flack from some of my followers on Twitter for voicing my disapproval of Crump. I respect and applaud his efforts with such a high-profile situation. He has been relentless when it comes to justice for Trayvon Martin, and I have the utmost respect for that. Now that that’s out of the way, I think the guy is a joke. Every time I see him on TV, which has a been A LOT the past few weeks, I cringe. I realize that he’s the family lawyer, and maybe he’s the best they could get. I don’t know. That doesn’t change my opinion of him, though. I find him extremely rough around the edges, and he struggles to form literate sentences. When I compare the 10 minutes I saw of Corey and the 3 weeks I’ve seen of Crump, I thank God she’s running the show from here. Finally, there’s Mark O’Mara (5), who has now become my biggest concern. Why? I like the guy. He is the first breath of fresh air coming from the Zimmerman camp. I’ve now seen three of his interviews in the past 24 hours, and he has nailed all of them. The first words I heard him utter were condolences to the Martin family. He comes off as a genuine human being who knows that his life has changed forever and who understands that a parent should never have to bury a child. This will surely get very interesting. Stay tuned…

Sports

The juxtaposition of Bobby Petrino (6) and Ozzie Guillen (7) this week would be comical if both weren’t involved in such incredibly stupid situations. Petrino essentially got fired for dipping his pen in company ink that he helped pay for and urged the company to invest in. Yeah, I can milk metaphors. The 25-year-old Jessica Dorrell (8) and 51-year-old Petrino have been involved in an “inappropriate relationship” for the past seven months. The worst part…Dorrell is engaged. Her fiancé is the loser in all of this. He’s a swim coach at Arkansas and has to deal with this mess. All in the family, I suppose. The formerly happy couple had a wedding website up a few days ago, but it has been taken down. If you’re curious about that guestbook and how it got absolutely mutilated, look here. By the way, Petrino and his wife put their $2.5 million dollar house on the market. A $2.5 million house for coaching kids whose compensation is a scholarship and stipend? I digress. Wait…there’s more… Now, for Ozzie Guillen. I’ve gone back and forth in my head debating whether or not I think Guillen should’ve been fired for his comments regarding Fidel Castro. On one hand, by offending a huge percentage of the Miami Marlins fanbase, it doesn’t make a lot of sense to keep him around. However, after watching his press conference, I think Guillen is sincerely remorseful. He made a mistake, acknowledged it, and I would say that he deserves a second chance…if he wasn’t already on his fifth or sixth chance. Let’s face it. Guillen is a hothead who has said a lot of stupid stuff. The media has made him the brazen manager that he is, and he should thank all things holy that the media didn’t destroy him.

I was going to talk about Lamar Odom (9) finally getting cut from the Dallas Mavericks, but he seems like such a waste of a precious spot. Then, I remembered that he’s a Kardashian. He gets paid for doing nothing. Good riddance. Speaking of Dallas-area sports, have you heard about this two-foot-long hot dog (10) available at Rangers Ballpark in Arlington??? Does Subway have some competition? Not with the $26 price tag. Yeah, there’s a reason why Americans are fat. No, thank you.

This just looks disgusting.

Techy Stuff

Facebook bought Instagram (11) for $1 billion. Let that marinate. For what? Why is something that lets people take pictures, mess with them, and post them even worth $1 billion? Facebook already has some absurd amount of users. What is it, 850 million? What’s something as trendy as Instragram going to do for Facebook? Is this a way of infultrating Twitter? That’s the only reason that would make sense to me. To be frank, I’d get rid of Facebook if I wasn’t on this thing we call The Thread and tagged in over 1,000 pictures. Twitter is my social media platform of choice. Now, that my mom, aunts, uncles, and random church members are friends of mine on Facebook, I have little use for it. #Twitter > #Facebook

Music

I am not mad at you, bro.

I can’t keep up with Jennifer Lopez (12) and her flavors of the week. Her boo, Casper Smart, is probably the envy of 25-year-olds everywhere, though. J. Lo is doing the cougar thing, and those of you who know me know that my ears perk up at the sound of cougars. I like the idea of cougardom. I happened to see this video late one night, and Mr. Smart, I approve. Good for you, sir.

I want to set my sights on someone who can actually sing, though, and that is Melanie Fiona (13). I’ve been listening to her album, The MF Life, for a little over a week now, and I love it. I wasn’t even the biggest fan of her music, but something told me to give this album a listen. Maybe it was “4 AM”. Either way, it is a wonderful album. Here are my five favorites:

Tales From The Metro(rail)

So recently I’ve moved to D.C. to pursue opportunities in my field, Government, as a Fellow, fancy I know, at a fundraising shop. Yesterday I left a fundraiser with a free tray of fruit, because I’m still broke. I made my way from the absolutely beautiful house we used as a setting for the shindig and headed to the Eastern Market Metro Stop. Whilst paying for my metrocard, who made public transportation so expensive, I thought “hmm I should eat these pineapples before they get warm” no one like lukewarm pineapples. As I took my seat to wait on the train I opened up the lovely tray and this is what happened.

“In The Morning:” The Top Ten Breakfast Cereals of All Time

Hey thREADERS! I know I express the sentiments of a good number of you by saying I LOVE cereal. In fact, while I was in college, me and some of the other threaders had a “Cereal Night” (no joke) where everyone brought their favorite cereals. It was great, but it also made me realize something about myself that I should put out there now;

It’s Always 5 o’clock Somewhere!

Recently, one of my facebook friends and former high school classmates posted this:

” SMH… Its a d@mn shame that when u text ppl about God or something God related that u can’t get any replies… Let me had texted about Happy Hour I bet boys would have been flooding the phone with responses… Don’t u know that with good Happy Hour isn’t needed because He is capable of giving us incomprehensible amoun…ts of joy and peace… Forget a Happy Hour I want a Happy Eternity…”

It posted it on our personal thread for a certain reason. The “d@mn” discredited the entire post. But when I posted it, the conversation turned to focus on the happy hour comment. Everyone agreed that chain texts are annoying, and there’s nothing wrong with happy hour. Jesus’s first miracle technically was continuing the flow during a happy hour shortage. I don’t think anyone “holier than thou” should condone happy hour until the church has a sufficient happy hour alternative.

The thread celebrates happy hour on occasions because it’s where thread conversation comes to life… over a few drinks. The gulliness (and messiness) is definitely heightened. If ever invited, beware of the thread happy hours. It either breaks you down or makes you stronger!!!

For Fat Kids Only…

For those of you who know me, you know that I enjoy life in full when I can describe my situation as an extremity. So when I’m doing something, I am… as we used to say in 2004… doing it big… real big.

Coincidentally my first love is food… I will get married one day, with the expectation that I will cheat on my wife with food. And while I state it this way to exaggerate my point… I am also 100% serious.
